Scottish Oatcakes

Oatcakes.  Warm, from the oven.  They are designed to make you swoon.
Mix:
1 cup flour
1 Tablespoon sugar
½ teaspoon salt
1 teaspoon baking powder
2 cups quick rolled oats, or you can mix half quick oats and half old-fashioned

Add:
½ cup melted butter
½ cup milk

Roll out to 1/8 inch thickness on a greased cookie sheet. If you like you can put a dried cherry or a piece of date in rows to add to the flavor.

Bake at 350 degreed F, or add 5 – 10 minutes more if you like to have a crisp edge. Some people like it more brown than others. I think the brown-ness adds flavor. CUT WHILE WARM into diamonds or squares. (They are best eaten when warm.)
