Coconut Chicken Casserole

This recipe is really flexible. We made it every New Years in China, and cut a square hole in the middle of the carrot “coins” as “lucky money.” Then we started adding more vegetables. Then we started doubling the sauce. Then we turned it into the filling for a chicken pie or just a plain veggie pie, with the sauce as key. Here is what the recipe looks like in my handwritten recipe book:
