Char’s Banana Bread

This is a “mix the dry then the wet ingredients, then put them together” recipe.

Preheat the oven to 350 and bake for 55 minutes.  Depending on the type of oven, it could easily take more or less time, so make sure you check for doneness.  Makes one loaf pan – the bigger size.

Mix together in a bowl:

2 cups of flour

1/2 cup of brown sugar

3/4 teaspoon of baking soda

1/2 teaspoon of salt

1 tsp cinnamon

In a separate bowl, mix

Mashed bananas equal to 1 and 1/2 cups – 3-4 big ones

1/4 cup plain yogurt or buttermilk

2 eggs

6 tbsp melted butter or oil, and you can blend them if you like

1 teaspoon vanilla

a dollop of molasses

 

Char likes to add wheat bran, chia seeds, wheat germ, or ground flax and other healthy additions.  If you do that, wash everything right away.  Chia seeds and flax mess with the texture of the bread.

Mix the dry and wet ingredients, mixing as little as possible, only enough to get everything mixed together.  Put it in the larger size of bread pans and put in the over for 55 minutes to an hour.  Check it towards the end to be sure you catch it before it gets dry from overcooking.
