Russian Poppyseed Cake

Ginny is an ace at this cake.

Heat the oven to 350F,  It will bake for 1 hour. This has preparation time, etc. so make sure you make it early.  You will need a buttered bundt pan or two loaf pans.

This recipe has a step at the beginning that will take an hour – you need to combine, and let sit for one hour:

1 cup poppy seeds
1 cup milk

Letting it sit is absolutely critical, so don’t shorten the time.  So you will wait for one hour.  Then:

Cream together

1 cup soft butter
2 cups sugar

Then separate
3 eggs. 

Take the
3 egg yolks, and add to the butter-sugar mix.  Then add the poppy seed-milk mix to that too.

Beat the
3 egg whites and add
2 teaspoons vanilla but put it aside until the end.

Sift together and add to the above:

2 cups flour
1/2 teaspoon salt
1 and 1/2 teaspoons baking powder
Then add the egg white mixture.

Put in a buttered bundt pan or 2 loaf pans

Cook for 1 hour for the bundt pan and less for the loaf pans.
