Divine Plum Sauce

This is good with just about any vegetable, and also good with meat.

¼ cup dried apricots
Cover with boiling water and soak them for 1 hour. Then chop them up finely and put them in a small pan.

Chop finely
1 cup fresh plums and make sure you don’t lose the juice as you chop. Add it all to the pan.
Then add:
1/8 tsp. cayenne pepper
3/4 – 1 tsp. salt
1-2 Tbsp water

Boil for 15 minutes, but watch for burning. Basically you shouldn’t leave it to go check your computer or anything else or you will be sorry. Add water if necessary.

Stir in:
½ cup sugar
½ cup vinegar
Simmer 20-30 minutes.
