Mu Shu wrappers – Mu Shu Pancakes

Add to blender:
1 and ¼ cup flour
2 tbsp sugar
3 eggs
1 and ½ cup milk
2 tbsp. melted butter or oil
pinch of salt

Mix in blender until smooth.

Pour a small amount into a teflon or non-stick frying pan
and roll the batter around in the pan until you have a circle the size you prefer.
The wrapper will be very flat.

Cook over a low temperature until done.
Flip and cook the other side.  Slide it out of the pan onto a plate.
You can pile them one on top of the other and they will keep warm.
